London’s most toothsome tiki lounge has become a permanent fixture of the global bar scene, as well as a breeding ground for some of the world’s best bartenders. Guests are greeted at the door by Polynesian statue, Bianca, before tumbling down the stairs into a 50s-style retro basement with low slung booths and wood-panelled walls. Cocktails here may be flashy, and often on fire, but beneath the showmanship is some well-researched tiki ingredients. And for those that shy away from the Hurricane (the tiki classic cocktail), there’s plenty of rum to keep them dancing regardless.
